Pumpkin Spice Latte recipe using almond milk:
**Ingredients**:
1. 1 cup unsweetened almond milk
2. 2 tablespoons pure pumpkin puree
3. 1 tablespoon sugar (adjust to taste)
4. 1/4 teaspoon pumpkin pie spice, plus more for garnish
5. 1/4 teaspoon pure vanilla extract
6. 1/4 cup strong hot coffee or espresso
7. Whipped cream (optional, for topping)
**Instructions**:
1. **Pumpkin Spice Mix**: In a small saucepan, whisk together almond milk, pumpkin puree, and sugar. Heat over a medium heat until hot, but don't bring it to a boil. Remove from heat.
2. **Add Flavors**: Whisk in the pumpkin pie spice and vanilla extract.
3. **Prepare Coffee**: Brew your coffee or espresso. If you want a stronger coffee flavor, you can add more than 1/4 cup.
4. **Combine & Serve**: Pour the coffee into a large mug. Add the pumpkin almond milk mixture and stir well. If you prefer a frothy latte, you can use a frother to froth the pumpkin almond milk mixture before adding to the coffee.
5. **Garnish & Enjoy**: Top with whipped cream (if using) and sprinkle a bit of pumpkin pie spice on top for garnish.
